Cooking instructions:

Take the Joint out of the fridge 30 minutes (an hour for larger joints) before you need to cook it.
Rub Sea salt into the skin prior to cooking to achieve the best crackling.
Preheat the oven to 200c fan/220c/gas 7, cook for 30 minutes, then reduce to 160c fan/180c/gas 4 for the remaining time. 35 minutes per 500g plus 35 minutes.
