-Pre heat oven to 200c fan
-Heat a frying pan until very hot, sear the lamb all over concentrating on the layer of fat, rendering this to a rich golden colour
-Cook in the oven for 20 mins
-Remove from oven wrap in cling film or foil and rest for 15 mins
-After resting remove film/foi and serve
